When you make brownies how do you get the flaky layer on top?

when ever other people make brownies their is this flaky layer but when i make them the top is like the part on the inside and not the layer....how do you get the layer on it?When you make brownies how do you get the flaky layer on top?
I love that flaky layer too! You have to bake the brownies for about 15-20 minutes longer than you normally would.When you make brownies how do you get the flaky layer on top?
Food 'science' is what works here. Please try whipping up your eggs and sugar before adding your other ingredients. IF you bake your brownies 15-20 minutes longer then you are supposed to all you will have is a hockey-puck, over cooked, and burnt chocolate tasting deformity. Yuk. Report Abuse

If you are making them from scratch beating the eggs with sugar until VERY fluffy (before adding the butter, chocolate, and flour) will help give you a nice sugary and almost crisp top to your brownies.
To get the flaky layer on top, which I adore, you have to back the brownies in the oven for about 20 minutes. After 20 minutes, you can take it out and look at it. If the flakes are on top, then eat away. If the flakes aren't on top then the ingredients, process, or what ever was not completed properly.
I don't know if you are baking from scratch, or a mix, but when I bake mine from scratch, I bake them for about 30 to 40 minutes. This always produces a flaky layer.
1.Sprinkle a pinch of magic fairy dust on the brownies


2.Crunch up some hobbit bread, mix it with mystic stream water


3.Say Gondour's prayer on the hobbit bread


4.Throw the hobbit bread away


5.Dust off the magic fairy dust, eat the dust


6. Enjoy the flaky layer
