I already made the cakes and stacked them on top of each other with frosting between the layers. I want to make it so that I will be able to cut the cake out into a shape more easily. If I were to wrap it in saran wrap and place it in the fridge or freezer, would the cake itself get hard? Too hard to eat, I mean. freeze it, cut it, crumb coat it and then freeze it again before you do the final frosting.
Hi Ray Ray, actually in real life a lot of bakeries baked their cakes in advance and freeze them. For us at home, it is ok to freeze the cake, you can take it out of the freezer one or two hours before planning to eat it. You can decorate or put the icing on the cake directly after taking it out of the freezer. But to cut it, of course you have to wait until it defrost or gets a little bit soft.
if you frost that cake directly from the freezer, do not be surprised to find the frosting bubble up. at the bakery I work at, the decorators always have the cakes out a while before frosting. you can always tell when they get rushed because then we have cakes with a bulge on top. Chill your cake well and then shape it. should be great. good luck.
