What is that layer of dough-looking stuff that they put on cakes in profesional bakerys?

I have see them like put this almost dough-like thing over the cake, then icing it. I'm not sure what it is, but it makes the cake look smooth. Could anyone tell me how to make that, or even what it is?What is that layer of dough-looking stuff that they put on cakes in profesional bakerys?
It's called fondant.





It's a sugar paste that has a tons of air worked into it, and you can mold it like playdough.





You're not supposed to eat it though, it tastes TERRIBLE.





Most people don't make it anymore, it's much easier to buy it. You can buy it in any color under the sun, or you can airbrush color onto it.What is that layer of dough-looking stuff that they put on cakes in profesional bakerys?
The purpose is a cake covering that doesn't involve frosting lines. :)





It's purely for looks. Usually there is a layer of buttercream frosting underneath, and any respectable server would rip the fondant off before serving.

marzipan.





INGREDIENTS


1 cup almond paste


2 egg whites


3 cups confectioners' sugar


1/2 teaspoon vanilla

DIRECTIONS


In a large bowl, knead almond paste to soften. Mix in egg whites. Knead in confectioners' sugar 1 cup at a time. Add vanilla. Knead until marzipan feels like heavy pie dough.


Wrap tightly in plastic, and store in refrigerator in a sealed container. To use after storage, let stand at room temperature until soft, then knead briefly.


Notes





A few drops of food coloring may be kneaded into portions of marzipan until the desired shade is achieved.





If marzipan stiffens up, just knead in a little water, egg white or corn syrup

I think it is dough
That would be what is called rolled fondant. I don't recommend making it. Wilton cake decorating company makes a packaged version.
Its called fondant. It is edible, but is nasty!!! I wouldnt eat! Its like a sugar dough and can be used not only to make cakes smooth but to decorate with ie making flowers or statues etc. You can buy it at any store that sells cake decorating items.
